All wines made at Pavlou Estate are produced primarily from the Xynomavro (acid-black) grape. The Estate owned vineyards range in age from 15 years to 100 years old and are grown organically. They are carefully managed so that they have a low yield and are not overburdened. The remaining fruit grows with increased flavor concentration.
The color of our wines is determined by the amount of time, after the initial crushing, that the grape skins remain mixed with the must. This is why, using only black skinned grapes, we are able to produce wines that range in color from a deep purplish-red, to a brilliant ruby, to a light gold.
Grown in the region for centuries, Xynomavro is one of the highest regarded red cultivars in Greece, delivering wines with medium to full body. Wines made from Xynomavro can be aged for up to 10 years.
